Blueberry Lemon Cake
Ingredients
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- ⅓ cup unsalted butter, melted
- 1 cup sugar
- 2 eggs
- ½ teaspoon vanilla extract
- 2 teaspoons fresh grated lemon zest
- 2 Tablespoons fresh lemon juice
- ½ cup milk
- 1 cup fresh blueberries
- 1 tablespoon all-purpose flour
Instructions
- Preheat oven to 180°C.
- Combine together dry ingredients.
- Combine butter, sugar, eggs, vanilla, lemon.
- Add milk and dry ingredients (alternating).
- Toss blueberries in flour (This will help them not to be evenly dispursed, I like to do this in a collander to allow even coating).
- Quickly fold the blueberries into the mix and immediately place in a 350 degree preheated oven.
- Bake for about 50 minutes, or until a toothpick comes out clean.
