Broccoli Fritters

Ingredients

  • 1 broccoli head cut into florets
  • 1 large egg
  • 3 tablespoons minced onions
  • 2 garlic cloves pressed
  • ½ cup shredded cheese
  • 2 tablespoons flour
  • ½ teaspoon salt
  • 2 tablespoons oil for frying

Instructions

  1. In a food processor, pulse the broccoli until it’s the size of fine couscous.
  2. In a large bowl, combine the broccoli, egg, onions, garlic, cheese, flour and seasoning. Stir until the mixture is well combined and moistened.
  3. Form the mixture into 1/2-inch thick patties, about 4 inches wide. It will make about 6 fritters.
  4. Heat the olive oil in a large skillet over medium-high heat and fry the fritters for about 10 minutes.
