Tofu Tacos

Ingredients

  • 500g tofu
  • 300g coleslaw
  • 12 tortillas
  • 1 lime
  • cilantro
  • 8 tbsp sweet chili sauce
  • 4 tbsp spicy mayonaise
  • 4 tbsp cornstarch
  • 4 tbsp oil
  • 2 tbsp sesame seeds
  • 2 tsp garlic salt
  • 1 tsp sugar
  • pinch salt & pepper

Instructions

  1. Pat tofu dry with paper towels, then cut into 1/2-inch pieces and mix with cornstarch and half the sesame seeds in a bag.
  2. Heat a large non-stick pan over medium-high heat. When hot, add 2 tbsp oil, then tofu. Pan-fry, turning occasionally. Once browned, add sweet chili sauce to the pan with tofu and cook until tofu caramalises.
  3. Meanwhile, add 1 tbsp lime juice, 1/2 tsp lime zest, 1 tsp sugar and 2 tbsp oil to a large bowl. Season with salt and pepper, then whisk to combine. Add red cabbage, carrots, half the cilantro and remaining sesame seeds to the bowl with dressing. Toss to combine.
  4. Warm tortillas in the microwave and then top with slaw and tofu, and then drizzle spicy mayo over the top. Top with cilantro and squeeze of lime if desired.
