Tofu Tacos
Ingredients
- 500g tofu
- 300g coleslaw
- 12 tortillas
- 1 lime
- cilantro
- 8 tbsp sweet chili sauce
- 4 tbsp spicy mayonaise
- 4 tbsp cornstarch
- 4 tbsp oil
- 2 tbsp sesame seeds
- 2 tsp garlic salt
- 1 tsp sugar
- pinch salt & pepper
Instructions
- Pat tofu dry with paper towels, then cut into 1/2-inch pieces and mix with cornstarch and half the sesame seeds in a bag.
- Heat a large non-stick pan over medium-high heat. When hot, add 2 tbsp oil, then tofu. Pan-fry, turning occasionally. Once browned, add sweet chili sauce to the pan with tofu and cook until tofu caramalises.
- Meanwhile, add 1 tbsp lime juice, 1/2 tsp lime zest, 1 tsp sugar and 2 tbsp oil to a large bowl. Season with salt and pepper, then whisk to combine. Add red cabbage, carrots, half the cilantro and remaining sesame seeds to the bowl with dressing. Toss to combine.
- Warm tortillas in the microwave and then top with slaw and tofu, and then drizzle spicy mayo over the top. Top with cilantro and squeeze of lime if desired.
